HEARTY ZUPPA TOSCANA from @kalejunkie #PacificPartner. This is Episode 3 of my Satisfying Soups series, where I’ve been sharing soups that are not only easy to make, they are incredibly delicious, nourishing and guaranteed to satisfy even the pickiest people in your life :). For this recipe, I am using @pacificfoods Organic Chicken Broth, one of my favorites! I keep several cartons in my pantry all year long for easy grab and go, and it is made with simple, organic ingredients that I can feel good about eating. This recipe is comforting and perfect for cozy season and my whole family came back for seconds. You have to try it!
 
Makes 6 servings
2 tb olive oil
1 yellow onion, diced
3 cloves garlic, minced
1 tb italian seasoning
1/2 tsp red chili flakes
1/2 tsp kosher salt & 1/2 tsp ground black pepper
1 lb mild italian sausage, casing removed
1/4 cup arrowroot or tapioca or corn starch (*this is optional, for a thicker soup)
4 small yukon gold potatoes cut into small chunks (about 2 cups once chopped)
1 cup kale, chopped
32 oz @pacificfoods organic chicken broth
1/2 cup heavy cream or full fat coconut milk or dairy free milk of choice
1/3 cup freshly grated parmesan cheese + more for topping
1 lemon, to be squeezed on top before serving
 
In a large pot or dutch oven over medium heat, add the olive oil. Once the pan is hot, add the onion, garlic, italian seasoning, chili flakes, salt and pepper. Saute for about 5 minutes, until the onions begin to soften. Add the italian sausage and use a spoon to break it up into smaller pieces. Once the sausage is browned, add the thickener (arrowroot, tapioca or corn starch), the potatoes, kale, chicken broth, heavy cream, and parmesan cheese. Stir and bring to a gentle boil. Reduce heat to low, cover, and let cook for 15 minutes or until the potatoes have softened. Stir in the lemon juice, taste and adjust seasonings as needed. Garnish with more parmesan cheese, and ENJOY!!!
