The @kalejunkie LIFE CHANGING TAHINI CHOCOLATE CHIP COOKIES, but PUMPKIN! If you haven’t made my OG recipe, what planet are you living on? 🤪 IYKYK! Every year I share the pumpkin version because T’IS THE SEASON and they are insane. They are soft and chewy, pumpkin-y and scream fall. Your life might be changed, who knows? This recipe is super adaptable to accommodate most diets/restrictions, so if you have questions about that, ask in the comments or read the blog post (link in bio)! ⁣

Makes 12 cookies⁣
1 cup almond flour⁣
3/4 cup tahini (the more liquidy the tahini, the better - I used @soomfoods)⁣
3 tb pumpkin puree⁣
1/2 cup maple syrup⁣
1 egg (or flax egg if vegan)⁣
2 tbsp pumpkin pie spice⁣
1 tsp baking soda⁣
1 heaping cup of chocolate chips ⁣
sea salt flakes for topping⁣
⁣
Preheat oven to 350. Add all ingredients to a bowl and mix well. Scoop dough and form 12 cookies. Bake for 10-11 minutes. They will be SOFT. Let them settle for a few minutes before eating. The key with these cookies is to slightly undercook them, so that they are nice and crispy on the outside and SUPER CHEWY on the inside. Sprinkle sea salt flakes on top.⁣
