OATMEAL CHOCOLATE CHIP ZUCCHINI BREAKFAST COOKIES (gf/vegan option)⁣
Makes 14 cookies⁣
3/4 cup gluten-free rolled oats⁣
1/3 cup oat flour⁣
1/4 cup ground flaxseed meal⁣
1/2 cup walnuts, chopped⁣
1 cup dairy-free chocolate chips⁣
2 teaspoons cinnamon ⁣
1/2 teaspoon nutmeg⁣
1 teaspoon baking soda⁣
1/2 teaspoon sea salt⁣
1/2 cup creamy almond butter⁣
1/4 cup maple syrup⁣
1 teaspoon vanilla extract⁣
1 egg (or substitute flax egg)⁣
3/4 cup zucchini, grated and pressed with a paper towel to remove excess water⁣
⁣
Preheat the oven to 375 F. Line a baking sheet with parchment paper and set aside.⁣
Next, in a large mixing bowl, add the dry ingredients. Stir together well. Then add the almond butter, maple syrup, vanilla, egg/flax egg, and shredded zucchini. Stir until just combined. Using a cookie scoop or a spoon, form 14-16 cookies, and line them up on the baking sheet. These cookies won’t spread too much. You can gently flatten each one if you’d like, and add a few extra chocolate chips, if desired. Bake for 11-13 minutes.
