BLTE PASTA SALAD (Bacon, Lettuce, Tomato, & Egg) with Champagne Vinaigrette, one of the best salads I’ve ever made and if you’ve been following along for a while, you know I’ve made MANY over the years. So get on it—it’s also a great one for Labor Day and a total crowd pleaser! You can easily make this one gluten-free by using gf pasta. I like rotini for this salad, but bowties would be fun too!⁣

Makes 4 servings⁣
1 16 oz box rotini pasta⁣
6 hard-boiled eggs, chopped⁣
6 slices cooked bacon, chopped⁣
1 cup cherry tomatoes, halved⁣
2 cups romaine lettuce, chopped⁣
1 bunch chives, finely chopped⁣
⁣
Champagne vinaigrette⁣
1/2 cup olive oil⁣
3 tb champagne vinegar (or red wine vinegar)⁣
1 tb dijon mustard⁣
2-3 cloves garlic⁣
1 tsp kosher salt⁣
1/2 tsp ground black pepper⁣
⁣
Prepare your hard boiled eggs and set aside. To use the method shown in the video, preheat oven to 350. Grease a loaf pan and crack eggs inside. Transfer loaf pan to a larger baking dish and fill the larger baking dish half way with water and transfer to the oven for 30-40 minutes until the yolks are cooked through—every oven is different. Once cooled, flip the loaf pan over and chop the eggs. Set aside. Cook bacon per your favorite method, then chop into smaller pieces. Cook pasta until al dente—refer to the package for specific time. Drain pasta and transfer to the refrigerator to cool. Next, prepare the champagne vinaigrette. In a blender, add all of the ingredients and blend until completely smooth. Assemble salad—cooked pasta, bacon, tomatoes, romaine, and chives. Pour dressing on top. Toss and enjoy!!!⁣
