PRO TIP: I recommend keeping this covered in the freezer (whole) and cutting off pieces to enjoy whenever the sweet craving strikes! [I cut the whole thing open here for video purposes only!]⁣

12 large medjool dates, pitted - make sure they are nice and soft! (I love @rancho_meladuco_date_farm)⁣
1/2 cup peanut butter (I used @georgiagrinders)⁣
3/4 cup vanilla ice cream, softened (@alecsicecream is my favorite!)⁣
1/2 cup salted peanuts ⁣
1 1/2 cups chocolate chips⁣
1 tsp coconut oil⁣
Flaky salt (@maldonsalt)⁣

Open the dates, remove the pits, and press them down on a parchment lined baking sheet, close together. Next, take a cup and spray the bottom with oil/cooking spray and gently press the dates down to flatten. Next, get your melted chocolate ready. Place the chocolate chips in a bowl along with the coconut oil and microwave in 2-3 30-second increments until fully melted and smooth, then set aside. Spread peanut butter on top of the smashed dates. Next add spoonfuls of softened vanilla ice cream and the peanuts. Finally, pour the melted chocolate over the top and add flaky salt. Freeze for minimum 1 hour until chocolate is set and ice cream has hardened again. Cut into pieces and enjoy!⁣
