CHOCOLATE COOKIE CUPS WITH CHOCOLATE GANACHE 🤌🏼 You need just 6 simple ingredients to make these cute little cookie cups and would you believe one of them is a box of cereal? I used my favorite lovebird cereal, which not only is the most nutritious (and delicious) on the market, it contains prebiotic fiber to support gut health! They are gluten-free and grain-free, yet taste so decadent thanks to the two ingredient chocolate ganache!⁣

The ingredients in the cacao flavor are simply: cassava, coconut, honey, coconut sugar, cacao, coconut oil, Himalayan salt, and vanilla. ⁣

Makes 24 cookie cups⁣
Base⁣
3 1/2 cups eatlovebird cacao cereal [or 1 1/4 cups coconut flour]⁣
1/2 cup maple syrup⁣
1/2 cup coconut oil [I use refined so it doesn’t taste like coconut]⁣
⁣
Ganache⁣
1 cup df chocolate chips⁣
1/2 cup full fat coconut milk (cream part only)⁣
⁣
Garnish: raspberries and strawberries⁣
⁣
Preheat oven to 350F. In a food processor, add the cereal and pulse until it is smooth like a flour. Then add the maple syrup and coconut oil and continue pulsing until well incorporate and you have a “dough.” It will be a little crumbly and that is ok! Grease a mini muffin tin well. Take 1 tb of the dough, make a ball, and press it into the muffin cavity. Use your thumb to make an indentation. Bake for 8-9 minutes. Remove from the oven and let cool. Next, make the chocolate ganache. Add the coconut milk to a small pot on the stove over medium heat. Once the coconut milk starts to simmer, remove from the heat and add the chocolate chips. Stir until smooth. Next, fill each cookie cup with the chocolate ganache. Let them cool. You can eat them as-is, or top with a raspberry or strawberry.⁣
