GRILLED CHEESE MEETS EGG IN-A-HOLE! Follow kalejunkie for more fun ideas! I have to say, I really LOVE THIS. It’s basically a delicious grilled cheese sandwich with a perfectly cooked egg in the center. Then I topped it with arugula dressed in lemon & olive oil, avocado, a drizzle of honey, red pepper flakes and flaky salt and WOW WOW WOW. I cannot wait for you to try this, thanks to food52 for the inspo. ⁣

Makes 1 sandwich⁣
2 tb butter⁣ (raw_farm_usa)
2 slices bread of choice (I used daveskillerbread white bread done right)⁣
6 small pieces cheddar cheese (I used cabotcreamery white cheddar)⁣
1 pasture raised organic egg (vitalfarms)⁣
⁣
Optional toppings⁣
Arugula (toss with olive oil and squeeze of lemon)⁣
Avocado⁣
1 tsp honey⁣
Red pepper flakes⁣
Flaky salt⁣
⁣
Add butter to a pan over medium heat. Add one slice of bread, followed by the cheese as shown, leaving the center empty. Cover with the other slice of bread. Wait about 4 minutes, then gently flip the sandwich to the other side and let cook in the pan for another 3 minutes. Note, the exact timing can be different for everyone, depending on what pan you are using, etc. But you just want the bread to be nice and crispy and brown on both sides, like a grilled cheese sandwich. Remove from heat. Take a cookie cutter or your spoon and carve out a hole in the center. Return the sandwich to the pan over LOW heat. Crack an egg into the center, then cover until the whites are set. That’s it. Add your favorite toppings and enjoy!⁣
