Follow @kalejunkie for more simple recipes! HOMEMADE NUTTER BUTTERS with 3-4 simple ingredients that you probably already have at home. To know me is to know that I don’t shame ingredients, BUTTTTT the ones at the store are just not very nutritious, so here’s how to make a better-for-you version at home, in minutes. These are softer than the packaged cookie and melt in your mouth! They are so good and you can freeze them to enjoy whenever you’d like. My boys loved these too!

Makes 8 small nutter butter cookies
3/4 cup oat flour 
3/4 cup almond flour
1/2 tsp vanilla extract (optional)
1/3 cup maple syrup
3/4 cup peanut butter (I used smooth peanut butter)

Preheat oven to 350 F. In a bowl, mix together the oat flour, almond flour, vanilla (if using), maple syrup and peanut butter. The dough will be thick. Line a baking sheet with parchment paper. Roll 2 tsp-ish balls with the dough and place them on the baking sheet, connecting two balls together at a time. Take a fork and make a hatch pattern. Bake for 9-10 minutes. Remove from the oven and let cool completely. Once cooled completely, fill each half with peanut butter and place another cookie on top to form a sandwich. Enjoy! Store extra cookies in an air tight container in the fridge for up to 2 weeks. You can also freeze them for up to 2 months.
