If you haven’t been to Kokkari, it needs to go on your bucket list because it is amazing! If you have been, then you know :) My friends treated me to dinner a few weeks ago and this was one of the appetizers—SO EASY, yet so flavorful. The “secret” is toasting the pine nuts to really bring out the flavor and using high quality feta and olive oil. It makes a difference. Here’s how you can have a little taste of Kokkari at home.⁣

6 cups watermelon, cubed as shown⁣
3/4 cup pine nuts, toasted⁣
1 cup greek feta, crumbled (always buy a block and crumble by hand for best flavor!)⁣
Handful fresh basil, chopped or torn by hand⁣
3 tb extra virgin olive oil⁣
Flaky salt⁣

Cut and cube the watermelon and set aside. Add pine nuts to a pan over medium heat and toast them for about 4-5 minutes, until fragrant. Watch carefully so they don’t burn. Crumble the feta and chop the basil. Now assemble. On a large plate/serving dish, add the watermelon, followed by the feta, pine nuts, and basil. Drizzle with olive oil, and hit it with flaky salt. ENJOY!⁣
