The DAIRY-FREE version of my DECONSTRUCTED PEACH PIE has finally arrived—right in time for your summer festivities! 🍑 It turned out incredible and it is so easy to make ☺️.⁣

I was challenged to make one of the recipes from my cookbook dairy-free, using @countrycrock Plant Butter in place of dairy butter, and Plant Cream in place of whipped cream. So naturally, I chose my Deconstructed Peach Pie!⁣
 ⁣
The result? It tastes exactly like my OG recipe. I couldn’t even tell that there was no dairy butter! I was even more surprised that I could make a plant-based whipped cream that was THICK, just like the dairy counterpart!⁣
 ⁣

4 large peaches, sliced into thin slivers⁣
1 TB lemon juice⁣
1 cup gluten-free baking flour or regular, all purpose flour⁣
3/4 cup plus 1 TB coconut sugar⁣
1/4 cup + 1 TB regular butter, melted (sub @countrycrock Plant Butter)⁣
2 TSP cinnamon⁣
1 1/2 TSP vanilla extract⁣
1/2 TSP salt⁣
1 egg⁣
1/2 cup chopped pecans⁣
Vanilla ice cream of choice (sub @countrycrock Plant Cream)⁣

Preheat the oven to 350 F. Grease a 9-inch pie dish or 8x8 inch baking dish well, and set aside. Cut peaches into slices about 1/2 inch thick - chunky peaches are fine, they don’t need to be even! Place the peaches in the pie dish/baking dish, spreading them out evenly. Sprinkle 1 tablespoon of the coconut sugar, 1 teaspoon of the cinnamon, and the lemon juice over the peaches, and give everything a quick toss. Next, in a medium-size bowl, add the flour, 3/4 cup coconut sugar, melted butter, remaining cinnamon, vanilla extract, and sea salt. Stir well, then mix in the egg and pecans. Once everything is well combined, scoop the batter on top of the peaches, using your hands to make even. Bake for 45-50 minutes, until the crust is nice and golden. Serve with vanilla ice cream or whipped Country Crock Plant Cream and enjoy!⁣
