CUCUMBER HEARTS OF PALM SALAD! Follow @kalejunkie for more easy recipes! This is one of my favorite summer salads and the best part? It doesn’t get soggy, which means you leftovers will be as good as day 1, or make a double batch for meal prep to enjoy all week!

4 persian cucumbers, sliced
1 15 oz can hearts of palm, liquid drained & sliced
1 cup cherry tomatoes, halved
1/2 red onion, chopped or sliced
1/2 cup italian parsley, chopped
Vinaigrette
1/3 cup extra virgin olive oil
2 tb red wine vinaigrette
1 tb dijon mustard
2 cloves garlic mashed
1 tsp salt
1/2 tsp ground black pepper
