I have tried—and made—a lot of watermelon salads over the years, but this combination right here is straight 🔥, I gave it the ‘ultimate’ title for a reason. There are so many textures and flavors happening—crunchy, soft, sweet, and tangy, it’s hard to believe that something so simple is this good.  It’s the salad you’ll be making on repeat this summer!⁣

Makes 6-8 servings⁣
4 cups watermelon, cubed⁣
6 persian cucumbers, sliced⁣
1/2 red onion, thinly sliced⁣
1/2 bunch mint, chopped⁣
1 jalapeno, seeds removed, chopped⁣
1/2 cup feta, crumbled⁣
1/2 cup pistachios, chopped⁣
1/4 cup extra virgin olive oil⁣
2 tb honey (or maple syrup)⁣
1 lime, zested & juiced⁣
1 lemon, zested and juiced⁣
1/2 tsp salt⁣
