If you’ve never made a Dutch baby, it’s like a cross between a pancake, a crepe, and a popover — all in one giant skillet. The edges crisp up on the side (like a popover) and it puffs up in the oven! When you take it out of the oven it flattens and it’s like a crepe and a pancake! Top with powdered sugar and maple syrup, and YEP, it’s going to be a great day!⁣

Batter⁣
4 eggs⁣
3 tb sugar⁣
1 tsp vanilla⁣
1/2 cup all purpose flour ⁣
2 tb unsalted butter, melted⁣
Pinch salt⁣
1 lemon, zested⁣
1/2 cup milk ⁣
⁣
1 cup strawberries, chopped⁣
2 tb unsalted butter⁣
⁣
In a blender, add all of the ingredients. Blend on LOW only for about 20 seconds until combined. Let rest in the blender for 10 minutes. Preheat oven to 450F. Next, chop the strawberries. Add melted butter to a 10 inch cast iron skillet over medium heat. Add chopped strawberries and coat with the butter. Next, pour the batter on top. Transfer the skillet to the oven and bake with 17-18 minutes. Remove from oven. Top with powdered sugar and maple syrup, if desired, and enjoy! ⁣
