NON-TRADITIONAL COBB SALAD with lemon vinaigrette—this is not a traditional Cobb salad for many reasons, namely that I’m using @chomps instead of bacon, I forgot the chicken (whoops) and I’m using grated parmesan cheese instead of blue cheese, and that’s just because I don’t like blue cheese and I actually eat all the recipes I share here 😏. That said, this is one of my FAVORITE salads and I can’t wait for you to try it—the dressing is SO GOOD, you’ll want to drink it.⁣

Makes 4 servings⁣
“Cobb” Salad⁣
3 cups romaine lettuce, finely chopped⁣
3 cups iceberg lettuce, finely chopped⁣
3 @chomps beef sticks or 2/3 cup bacon, chopped (code KALEJUNKIE to save 20% off your Chomps orders!!)⁣
1 cup cherry tomatoes, halved⁣
3 hard boiled eggs, chopped⁣
1 avocado, cubed⁣
1/2 cup freshly grated parmesan cheese⁣
⁣
Lemon Dijon Vinaigrette⁣
1/3 cup olive oil⁣
1 tsp honey⁣
2 lemons, juiced (1/4 cup)⁣
1 tsp dijon mustard⁣
2 garlic cloves, minced⁣
1/2 tsp cumin⁣
1 tsp salt and 1/2 tsp black pepper⁣
⁣
First, prepare the lemon vinaigrette—whisk everything together, taste to adjust salt/pepper and set aside. Next, chop the lettuces, Chomps/bacon, tomatoes, eggs and avocado. Assemble the salad in a bowl, add parmesan cheese, pour dressing on top. Toss and enjoy!!! ⁣
