I nailed this recipe, it tastes exactly like Chipotle, but BETTER—it’s fresher, it’s homemade, and that addition of cumin take it to the next level. You’ll see smirk 😏!⁣

**I recommend using organic, non-gmo corn, and it will say that on the bag!⁣
⁣
2 bags frozen corn (I use 2, 14 oz bags)⁣
1 large poblano pepper⁣
1 small red onion, diced⁣
2 jalapeños, sliced, seeds removed, and diced⁣
1/2 cup cilantro, finely chopped⁣
1 lemon, juiced⁣
1 lime, juiced⁣
2 tsp cumin⁣
1 tsp salt⁣
⁣
Prepare frozen corn according to package instructions (boiling the corn in water or in the microwave). Let the corn cool while you prepare everything else. Next, roast the poblano pepper. I do this on an open flame on my stove. It takes about 3-4 minutes. Remove when the skin has blackened, add it to a bowl, cover and let sit for 10 minutes. Peel the blackened parts off, remove seeds, and chop it into small pieces. Now add all of the ingredients to a large bowl and toss to coat well. Serve with tortilla chips. Store leftovers in a covered container for up to 4 days. ENJOY!!!⁣
