Follow @kalejunkie for more! CRISPY BAKED CHICKEN TACOS 🌮—the easiest weeknight dinner that you can customize any way you like! I make weekly, a little different each time, but the one thing we can all agree on is that they are GOOD. Make them once and you will see why. You can use any meat and any tortillas you like. I think the secret is adding the enchilada sauce to the meat, for more flavor, but you can be the judge!⁣

Makes 12 tacos⁣
2 tb avocado oil or oil of choice⁣
1 onion, diced⁣
3 cloves garlic, mashe⁣
1 pound ground chicken⁣
2 tsp paprika⁣
2 tsp cumin⁣
1 tsp salt⁣
1 tsp pepper⁣
1/2 tsp chipotle pepper⁣
1/2 cup mild red enchilada sauce⁣
12 thin corn tortillas or tortillas of choice⁣
1 1/2 cups mexican blend cheese⁣

Garnishes of choice: my dipping sauce is medium salsa (1/2 cup) + greek yogurt (1 cup), but guac would be great too!⁣

Preheat oven to 400F. Heat oil over medium heat. Saute the onion and garlic for about 3-4 minutes, then add the chicken, breaking it down into small pieces with a spoon. Once the chicken is almost cooked through, add the spices and stir until incorporated. Last, add the enchilada sauce. Remove from heat and begin assembling the tacos. ⁣

To make the tortillas nice and pliable, you need to wrap them in a damp towel and microwave for about 30 seconds. Once the tortillas are soft, add some cheese to one side, followed by a scoop of meat and more cheese. Gently fold over the other side until the taco is shut. If the tortillas crack, they were not moist enough to begin with. Repeat process and line them up on a baking sheet. Spray the top of the tacos with oil of choice. Once done, take another baking sheet and gently place it on top. Place the trays in the oven for 18 minutes, but remove the top tray at the 15 minute mark and turn on the broiler for the last 2-3 minutes, so get a crispy top. Be sure to watch it, so they don’t burn. Remove from oven and serve. To make the sauce, mix the salsa and Greek yogurt in a bowl. ENJOY!⁣
