She uses a store-bought miso-ginger dressing, which is great! I was craving my own homemade version, so I made the Miso Carrot Ginger Dressing recipe from page 213 of my cookbook, LOVE TO EAT, which I recommend 10000000%! My recipe is like Benihana but better and you can make a batch to last a week.⁣

Persian cucumbers⁣
Mini sweet peppers⁣
1/2 cup miso/ginger dressing (or my homemade version)⁣
Everything bagel seasoning⁣
Chili crunch (I used my homemade version, but you can buy this at Trader Joe’s or use the Momofuku brand)⁣

Slice cucumbers and sweet peppers and add them to a bowl. Toss with dressing, bagel seasoning and chili crunch. That’s it, enjoy!⁣
