Follow @kalejunkie for more! EASY CHICKEN ENCHILADA CASSEROLE! This is the dinner you make when you want something easy and delicious that won’t break the bank. And, it’s picky-kid approved too, I know because I have two of them :) This recipe uses simple pantry ingredients that I picked up from @sprouts, like enchilada sauce, beans, and olives. I am also using a cooked roasted chicken, making it even easier 😏!⁣

Makes 6 servings⁣
8 corn tortillas halved⁣
1 15-16 oz jar enchilada sauce⁣
1 15 oz can pinto beans or refried beans⁣
2 cups shredded chicken⁣
2 cups shredded cheese of choice⁣
Garnishes: tomatoes, red onion, sliced black olives, avocado and cilantro⁣
⁣
Preheat oven to 350. In a 9x11 baking dish, pour 1/4 of the enchilada sauce on the bottom and 5-6 tortilla halves, followed by a small handful of chicken, some beans, cheese, and enchilada sauce. Add another layer of tortillas and repeat. Add cheese on top as the final layer. Cover with foil and bake for 30 minutes. Remove foil and bake 10 minutes more or until cheese is fully melted. Add garnishes on top and ENJOY! ⁣
