They are dairy-free, gluten-free, and have the perfect balance between a smooth texture (inside) and crunch (on the outside). It’s safe to say that this is one recipe you will be eating on repeat all year long—I am obsessed and you will be too!⁣

Makes 12 eggs⁣
Truffle fulling⁣
1 cup creamy peanut butter, the drippier the better⁣
2 tb coconut flour⁣
3 tb maple syrup⁣
1 tsp coconut oil, melted⁣
1 tsp vanilla extract⁣
1/2 cup freeze dried strawberries, blended into powder⁣
⁣
Coating⁣
1 1/2 cups dairy-free chocolate chips⁣
1 tsp coconut oil⁣
1/4 cup cacao nibs⁣
⁣
I buy the freeze-dried strawberries from Trader Joe’s or Amazon. They come in 0.8-1 oz bags and you need one full bag to get 1/4 cup of powdered strawberries. ⁣

In a bowl, add the peanut butter, coconut flour, maple syrup, melted coconut oil, vanilla, and powdered strawberries. Mix well. The batter should be thick. If it’s not, let it sit for a few minutes so that the coconut flour can absorb it. If it’s still not thick, just add another tablespoon of coconut flour (it all depends on how liquidy your peanut butter was to begin with). Next, line a baking sheet with parchment paper and use a scoop to form 12 balls and shape them into eggs. Freeze for 20 minutes. Next, make the chocolate coating. In a small bowl, melt chocolate chips and coconut oil in the microwave in 2-3, 30-second increments, until fully melted. Stir in the cacao nibs. Remove eggs from the freezer and dip each one in the chocolate and place them back on the tray. Let set and enjoy. Store extras in a covered container in the refrigerator for up to two weeks.
