Spicy Cucumber Avocado Salad, follow @kalejunkie for more easy recipes! This is a super simple salad that packs a big punch—its tangy, refreshing, and it’s safe to say, you’ll eat the entire bowl in one sitting, you’ve been warned. SO SO GOOD. I can’t wait for you to try it! This salad is best eaten immediately or you can chill it and then serve—up to you!

Makes 4 servings
2 english cucumbers, diced
1 large avocado, diced
2 tb cilantro (or parsley), chopped
1 clove garlic, mashed
3/4 tsp cumin
1/4 tsp crushed red pepper flakes
2 tb olive oil
1 tsp apple cider vinegar
1 lime, juiced
1/2 tsp salt and 1/2 tsp pepper

Add all of the ingredients to a bowl and toss to coat well. Serve immediately or chill in in the fridge until serving. Enjoy.
