SPAGHETTI PIE from @kalejunkie, let’s go! This is a great way to use leftover spaghetti, or in my case, I make a fresh batch just to make this. You might be wondering, WHYYYYY make a spaghetti pie instead of just making a bowl of spaghetti. Well, one, it’s FUN, but more than that, the edges, bottom and top get nice and CRUNCHY, while the center stays nice and soft, and it’s so delicious! And if you have kids, they will love this idea as well. If you are gluten-free, you can use gluten-free spaghetti, and you can even use jarred marinara sauce. And finally, for a higher protein option, simply saute some ground beef, or tofu crumbles and add it to the mixtures. If you have leftovers, freeze them and enjoy on nights you don’t feel like cooking. ⁣

Makes 8 servings⁣
1 16-oz package of spaghetti (gluten-free will work!)⁣
3 eggs⁣
1 cup ricotta cheese (I used @bellwetherfarms)⁣
2 tb italian seasoning⁣
1 1/4 cups freshly grated parmgiano reggiano cheese⁣
2 cups marinara sauce (I used @raoshomemade, IYKYK)⁣
3/4 cup shredded mozzarella cheese⁣
1 tsp salt & 1 tsp ground black pepper⁣

Preheat oven to 350F. Grease a 9-by-3-inch spring cake pan with cooking spray. If you don’t have one, use a pie dish. Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and set aside the pasta. In a large bowl, whisk together the eggs, ricotta cheese, italian seasoning, 1 cup of the parmesan, salt, pepper, and marinara sauce. Add the cooked spaghetti and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and remaining 1/4 cup parmesan. Bake until golden brown, 27 to 30 minutes. Let rest for a few minutes, then cut into wedges and serve as-is or with more marinara sauce on top. ENJOY!⁣
