Makes 6 servings⁣
3 tb butter⁣
2 shallots, chopped ⁣
3 cloves garlic, mashed⁣
1 16oz package alphabet pasta (~2 cups)⁣
4 cups chicken broth⁣
1 Parmigiano reggiano rind (optional, but adds so much flavor)⁣
2 tsp salt⁣
1 tsp ground black pepper⁣
1 1/2 cups finely grated parmigiano reggiano cheese⁣

In a large pot on the stove over medium heat, add the butter. Once melted, add the shallot and garlic, stirring until the shallots soften, about 5 minutes. Add the alphabet pasta and stir to coat well with the butter in the pan. Continue to stir the dry pasta for about 3-4 minutes until it starts to get golden in color and it smells toasty. Add the chicken broth, rind, salt & pepper, stirring well. Bring to a gentle boil then turn heat to low and cook uncovered for about 15 minutes until most of the liquid has absorbed. Stir in the parsley and cheese, plate and enjoy. ⁣
