Follow @kalejunkie for more recipes! CREAMY BEET FETA PASTA, perfect for Valentine’s day with it’s pretty pink color, and it can be made gluten-free using gf pasta and vegan using plant-based feta! The best part about this recipe is that it comes together in the blender—no need to dirty a million dishes in the process, and it tastes like it came from a restaurant—you’ll see!⁣

CREAMY BEET FETA PASTA—makes 4 servings⁣
16 oz pasta of choice⁣
4 beets, precooked OR 3 uncooked beets, washed and scrubbed and cut into quarters (no need to peel)⁣
3 garlic cloves ⁣
1/2 cup cashews, soaked overnight or in boiling water for 10 minutes⁣
1/2 cup nutritional yeast⁣
1 lemon, juiced + the zest⁣
1/2 block feta cheese (or vegan feta)⁣
1 tsp salt⁣
13 tsp black pepper⁣
2-3 tb reserved pasta water ⁣

If roasting the beets: preheat oven to 400F. Add to a baking sheet and drizzle a little olive oil and s/p on top. Roast in the oven for 30 minutes, then remove from oven and set aside.⁣
⁣
Boil water, heavily salt, and prepare pasta according to package instructions, making sure to reserve some of the pasta water. When pasta is done, strain and set aside.⁣
⁣
To make the sauce, add the beets, garlic, soaked cashews, nutritional yeast, lemon, lemon zest, feta, salt and pepper. Blend until smooth, using some of the reserved pasta water until desired consistency is reached. Taste and adjust s/p as needed. Pour sauce over the pasta, grate more feta on top if desired and enjoy!!!⁣
