It is moist, flavorful, and a great way to use up any fresh or frozen cranberries you have left from the holidays! This is easily one of the best recipes I created last year and I can’t wait for you to make it! ⁣
⁣
2 cups oat flour (or sub regular flour)⁣
1 cup coconut sugar ⁣
2 tsp baking powder⁣
½ tsp baking soda⁣
1 tb cinnamon⁣
½ tsp nutmeg⁣
1 cup orange juice ⁣
2 tb orange zest⁣
1 stick unsalted vegan butter, melted and cooled⁣
1 cup cranberries, fresh or frozen. ⁣
⁣
Icing⁣
1 cup powdered sugar⁣
3 tb orange juice ⁣
1 tb orange zest ⁣
⁣
Preheat oven to 350F.  Line a loaf pan with parchment paper and set aside. In a medium bowl, mix together the dry ingredients. Next, add in the wet ingredients. DO NOT OVER-MIX. If you are using fresh cranberries, gently fold them in. If using frozen cranberries, gently coat them in flour and then add them in. Bake for 45-50 minutes. It’s ready when a toothpick comes out clean. Let the loaf cool completely. To make the icing, mix together the powdered sugar, orange juice and orange zest until a thick icing forms. You might need to add a touch more orange juice. Pour icing over the loaf and slice. Store in an airtight container in the fridge for up to one week. ⁣
