Salad
1 bunch dino kale, stems removed and chopped
1 1/2 cups butternut squash, peeled, cubed and roasted
1 shallot, sliced
1/2 cup dried cranberries
1/2 cup pepitas (pumpkin seeds)
1/2 cup pistachios
2/3 cup parmesan cheese, grated

Dijon Vinaigrette
¼ cup olive oil
2 tb balsamic vinegar
1 tb maple syrup
1 tb dijon mustard
1/2 tsp teaspoon salt
1 tsp ground pepper
