BLUEBERRY LEMON COOKIE PROTEIN SMOOTHIE // Welcome to Week 2 of the January smoothie challenge, which is just a fun and EASY way for all of us to get more fruits, veggies, and protein into our diets, TOGETHER 👯‍♀️. If you love blueberry pie, you are going to *love* this smoothie! It’s got protein, fiber, healthy fats to keep you full, and even some hidden veggies with frozen cauliflower (and nope, you can’t taste it).⁣

Blueberry Lemon Cookie Protein Smoothie (makes 1 serving)⁣
1 cup frozen blueberries⁣
1/2 cup frozen cauliflower “rice”⁣
1 lemon, juiced AND add the zest of the lemon⁣
2 dates, pitted or 1/2 banana⁣
1 scoop vanilla protein powder⁣
1 tb cashew or almond butter⁣ (I love @georgiagrinders)
1/2 tsp almond extract (optional, but highly recommended)⁣
1 cup milk of choice⁣
⁣
Blend until desired smoothie consistency is reached. You might need to scrape down the sides of your blender/add more almond milk if needed. ENJOY! ⁣
