Follow @kalejunkie for more ideas! CRISPY SMASHED PIZZA POTATOES and this one is inspired by my friend Stella from @hungry.happens! We all love smashed potatoes, so when I saw this idea, I had to make them—kid and parent approved, they are SO YUMMY!⁣
⁣
1 pound potatoes (I used organic yellow potatoes)⁣
Olive oil spray⁣
1 cup pizza sauce (I used @raoshomemade)⁣
1 cup mozzarella cheese⁣
Mini pepperonis⁣
Freshly grated parmesan ⁣
⁣
Add cleaned potatoes to a pot of boiling water. Boil for 15 minutes or until fork tender. Preheat oven to 425F. Line a baking sheet with parchment paper and set aside. Next, drain potatoes, let cool for a few minutes, then cut each potato on a cross hatch, as shown. Place a small piece of parchment paper on top and then smash with a glass. This will help so that the potatoes don’t fall apart. Repeat with all the potatoes. Spray with olive oil spray and season with salt and pepper. Add pizza sauce, mozzarella, and pepperoni. Bake for 15 minutes or until the edges are golden and the cheese is fully melted. ⁣

Pro tip: to get the potatoes extra crispy, once you’ve smashed them, spray with olive oil and pop them in the oven for 20 minutes. Then add the toppings. ENJOY!⁣
