Follow @kalejunkie for more recipes! THE BEST EVER VEGAN CRANBERRY ORANGE LOAF needs to happen in your house STAT. It is moist, flavorful and the texture is on point! This loaf is easily one of the best recipes I have created in 2022 and I cannot wait to share it with you!⁣
⁣
2 cups oat flour (or sub regular flour)⁣
1 cup coconut sugar ⁣
2 tsp baking powder⁣
½ tsp baking soda⁣
1 tb cinnamon⁣
½ tsp nutmeg⁣
1 cup orange juice ⁣
2 tb orange zest⁣
1 stick unsalted vegan butter, melted and cooled⁣
1 cup fresh cranberries⁣
⁣
Icing⁣
1 cup powdered sugar⁣
3 tb orange juice ⁣
1 tb orange zest ⁣
⁣
Preheat oven to 350F.  Line a loaf pan with parchment paper and set aside. In a medium bowl, mix together the dry ingredients. Next, add in the wet ingredients. DO NOT OVER-MIX. Gently fold in the cranberries. Bake for 45-50 minutes. It’s ready when a toothpick comes out clean. Let the loaf cool completely. To make the icing, mix together the powdered sugar, orange juice and orange zest until a thick icing forms. You might need to add a touch more orange juice. Pour icing over the loaf and slice. Store in an airtight container in the fridge for up to one week. ⁣
