Follow kalejunkie for more easy recipes! You need to make KOURABIA, aka Armenian “S” Cookies! This is a traditional Armenian cookie that I grew up with. They are made with only 4 ingredients (butter, flour, vanilla, powdered sugar) and they melt in your mouth!⁣

Makes 2 dozen cookies⁣
2 sticks unsalted butter, room temp⁣
1/4 cup powdered sugar, plus more for dusting⁣
2 tsp vanilla extract (optional but recommended)⁣
2 cups all purpose flour (or gluten free 1:1 flour)⁣
⁣
Preheat oven to 350F. In a stand mixer, beat the butter, powdered sugar, and vanilla extract until light and fluffy, for about 4-5 minutes, scraping down the sides as necessary. You do not want a heavy cookie, so give it the full 4-5 minutes. Next, add the flour, and mix until fully incorporated, scraping down the sides. This will take about two minutes. Form 12-16 balls, then roll each one into a cigar shape and place them on a parchment lined baking sheet. Genrly bend each one into an “S” shape. Bake 18-22 minutes. Remove from oven and while the cookies are still hot, sprinkle heavily with powdered sugar, and enjoy! ⁣

These cookies can stay at room temp in a container or pop them in the fridge for a few weeks, or freeze for a month. ENJOY!⁣
