Salads always seem to get forgotten during the winter months, but I’m determined to change that with my NEW Winter Kale Salad with Butternut Squash & Dijon Vinaigrette with @mailleus Dijon Original. It’s got all the flavor and textures happening and it’s going to become your new favorite kale salad!⁣

Salad⁣
1 bunch dino kale, stems removed and chopped⁣
1 1/2 cups butternut squash, peeled, cubed and roasted⁣
1 shallot, sliced⁣
1/2 cup dried cranberries⁣
1/2 cup pepitas (pumpkin seeds)⁣
1/2 cup pistachios⁣
2/3 cup parmesan cheese, grated⁣
⁣
Dijon Vinaigrette⁣
¼ cup olive oil⁣
2 tb balsamic vinegar⁣
1 tb maple syrup⁣
1 tb @mailleus Dijon Original mustard⁣
1/2 tsp teaspoon salt⁣
1 tsp ground pepper⁣
⁣
Preheat oven to 400F. Peel, cut and chop butternut squash. Toss lightly in olive oil and bake for 40 minutes, tossing at the halfway point. Prepare dijon vinaigrette, by whisking together all of the ingredients, and set aside. Next, assemble salad. Add kale and about 1 tsp salt. Use your hands to massage the kale for about 1 minute, to soften it. Add the cooked squash, shallot, cranberries, pepitas, and pistachios. Pour dressing on top and toss to coat well. Enjoy!⁣
