COZY TURKEY NOODLE SOUP, perfect for your turkey leftovers or just make it on repeat with fresh turkey or chicken this winter. It is so cozy and so delicious, and it freezes well too! ⁣ ⁣ Makes 8 servings⁣ 3 tb olive oil⁣ 2 carrots, peeled and chopped⁣ 2 stalks celery, chopped⁣ 1 medium yellow onion, chopped⁣ 2 leeks, chopped, whites and light green parts only⁣ 1 tsp salt⁣ 1 tsp black pepper⁣ 3 cloves garlic, minced⁣ 8 cups turkey stock (or chicken broth) ⁣ 1 lemon, juiced⁣ 1 tb Italian seasoning⁣ 2 bay leaves⁣ 1 12-oz package egg noodles⁣ 2 cups cooked turkey, shredded or cubed⁣ ⁣ In a large pot over medium heat, add the olive oil, followed by the carrots, celery, onion, and leek and cook until soft, about 5-6 minutes. Season generously with salt and pepper. Add garlic and italian seasoning, mixing well, then add the broth, lemon juice and bay leaves, stirring 1 minute more. Bring to a gentle boil, then add the noodles. Cook for about 7 minutes, until the noodles have softened. Remove the bay leaves. Add the turkey and cook about 4-5 minutes, more until the turkey is warm. Taste and add more salt and pepper as needed.
