Thanksgiving Series Ep. 5 🥧 Follow @kalejunkie for more recipes! QUICK AND EASY MINI PECAN PIES! Because there is nothing cuter than little handheld desserts 🤌🏼. You can make these in MINUTES, no hassle involved, and you can make them ahead of time. SO GOOD, I can’t wait for you to try them!⁣

Makes 12 mini pecan pies⁣
2 packages refrigerated pie crusts⁣
1 3/4 cups chopped pecans⁣
1/3 cup coconut sugar (or brown sugar)⁣
1/4 cup maple syrup 
1 egg⁣
3 tb butter, melted ⁣
2 tsp vanilla extract⁣
Pinch sea salt⁣
⁣
Preheat oven to 350F. Rub melted butter inside the muffin tin or spray well with cooking spray so the pie crust doesn’t stick. Next, GENTLY roll out the pie crust on a flat surface. Take a 4-inch cookie cutter and cut out 12 circles. Gently place them into each cavity of the muffin tin. Next, make the pecan filling. Add the pecans, coconut sugar, egg, melted butter, vanilla extract and salt to a bowl. Mix well. Fill each mini pie with filling. Bake 22-25 minutes, until the pecan filling is set and the crust is golden. Let cool completely, add whipped cream on top and serve!⁣
