Follow @kalejunkie for more recipes! Pumpkin Cheesecake for 2 (or in my case, just 1–me 😉). If you love cheese cake you are going to love this pumpkin version. And you can use any cookies you’d like and make this entire recipe vegan. I used Oreos bc balance in life is a beautiful thing but you do you. ⁣

5 pumpkin cookies of choice⁣
1 tsp butter (or vegan butter)⁣
1/3 cup cream cheese (or vegan cream cheese)⁣
2 tb powdered sugar⁣
⁣
Crush 3 cookies. Add to the bottom of a ramekin. Pour melted butter on top. Mix, pat down, and refrigerate. Next, beat the cream cheese and powdered sugar until smooth. Add one more crushed cookie to the batter. Add to the ramekin and smooth it out. Add one more crushed cookie on top and refrigerate for one hour so it’s nice and cold and enjoy.
