I threw this together on a whim and couldn’t believe how yummy it was—SO simple, so refreshing, and healthy, too! You are going to love it.

1 english cucumber, sliced thin
3 tb fresh dill
1/4 red onion, sliced thin
1 clove garlic, mashed
1/3 cup greek yogurt (or plant based)
2 tb red wine vinegar
Salt & pepper 

Add all ingredients to a bowl, mix and enjoy. It doesn’t get any easier than this, friends!
