COPYCAT EREWHON KALE & WHITE BEAN SALAD 🥬 Because as much as I love buying this salad from Erewhon on every single L.A. trip, it’s nice to save $18 and make it myself. And now you can make it too. ⁣
⁣
Makes 4 servings⁣
Salad:⁣
1 bunch curly kale⁣
1 avocado ⁣
1 15oz can white beans, drained and rinsed⁣
1/3 cup hemp hearts ⁣
1/3 cup sunflower seeds⁣
1/3 cup pumpkin seeds (pepitas)⁣
⁣
Dressing:⁣
1/3 cup olive oil⁣
1/4 cup lemon (1-2 lemons)⁣
1-2 tb maple syrup⁣
2 tsp dijon mustard ⁣
2 cloves garlic, mashed⁣
Salt & pepper⁣
⁣
Wash and dry kale and finely chop it into pieces. Chop avocado into small pieces. Wash and rinse white beans. Prepare dressing by whisking together all of the ingredients. In a large bowl, add the chopped kale, avocado, beans, hemp hearts, sunflower seeds, and pumpkin seeds. Pour dressing on top and toss to coat well. Enjoy!!⁣
