CHICKPEA ORZO SALAD WITH LEMON-DILL DRESSING! This happens to be one of my favorite salads yet—there is something so comforting about orzo—IYKYK—and there are so many textures happening, it’s going to be your new fav too! ⁣
 ⁣
You can make this salad completely vegan and plant based by substituting the feta cheese for a vegan feta cheese or just omitting it entirely.⁣
⁣
This recipes makes 6-8 servings, which makes this a fantastic one to meal prep and enjoy during the week. ⁣
⁣
Orzo salad:⁣
1 cup uncooked orzo⁣
1 15-oz can chickpeas, drained and rinsed⁣
1 English cucumber, chopped (about 1 1/2 cups)⁣
1 cup feta cheese, crumbled (or sub for a vegan feta)⁣
1/2 cup red onion, diced⁣
1/2 cup raw almonds, chopped⁣
⁣
Dressing:⁣
1/3 cup olive oil⁣
1 lemon, juiced (3 tablespoons)⁣
1/4 cup fresh dill, finely chopped⁣
1 clove garlic, mashed or minced⁣
2 tsp cumin⁣
1 tsp sea salt⁣
1/2 tsp ground black pepper⁣
⁣
Cook orzo according to package instructions. Drain, rinse with cold water, and set aside. Next prepare the dressing, by whisking together all of the ingredients. Taste and adjust if needed (sometimes I like to add more lemon!). For the salad, add the cooked orzo to a large bowl, along with the rest of the ingredients. Pour the dressing on top and toss to coat well. Serve at room temp or chilled. Enjoy! Store in a covered container in the refrigerator for up to one week. It gets better as the days go by!⁣
