MY FAVORITE PEACH GAZPACHO! 🍑 Follow @kalejunkie for more recipes like this! Gazpacho has origins in Spain and it is a delicious COLD soup, that I literally crave during the hot summer months! So I am clear, this is *not* an authentic Spanish gazpacho, it is my own version that I love made with peaches! ⁣

It is so easy to make, all you need to do is add all of the ingredients to a food processor and process until as smooth as possible - no straining needed! Then chill for 20-30 minutes before serving because it’s better that way!!! Add your favorite toppings and then enjoy.⁣

Makes 4 servings⁣
3 peaches (I used @peaches.la_), quartered⁣
1/2 english cucumber, diced⁣
1 tomato (I used a yellow heirloom tomato), quartered⁣
2 garlic cloves⁣
2 limes, juiced⁣
1/4 cup olive oil⁣
2 tb champagne vinegar (balsamic works well too)⁣
3/4 cup water⁣
4 basil leaves⁣
1 1/2 tsp salt⁣
1 tsp pepper⁣
⁣
Optional garnishes: avocado, peaches, cucumber, basil, a drizzle of olive oil, salt & pepper⁣

In a food processor, add all of the ingredients above, and process until as smooth as possible. There will be some texture and that is ok! Transfer to a large bowl and CHILL in the fridge for 20-30 minutes before serving. Add garnishes and enjoy!⁣
