COPYCAT EREWHON CABBAGE SLAW! Follow @kalejunkie for more easy recipes! A few weeks ago I was in LA and stopped at Erewhon (my favorite place) for lunch and saw a version of this salad in the case—I bought a huge container and inhaled the whole thing in < 5 min, so I knew I had to recreate it for you guys! My recipe tastes exactly like the Erewhon version, and it make a HUGE amount, so you can enjoy this all week long. And because there is no lettuce, this slaw gets better and better as the days go by. I can’t wait for you to try it!⁣

Makes 8 servings⁣
⁣
1 small head red cabbage, finely chopped⁣
1 cup cilantro, finely chopped (1 bunch)⁣
1 cup parsley, finely chopped (1 bunch)⁣
3/4 cup green onion, finely chopped (1 bunch)⁣
⁣
Dressing⁣
1/3 cup olive oil⁣
1/4 cup apple cider vinegar⁣
1/3 cup coconut aminos (or sub tamari or low sodium soy sauce)⁣
2 tb maple syrup⁣
1-2 tsp salt⁣
1-2 tsp ground black pepper⁣
⁣
In a bowl, add all of the slaw ingredients, making sure to finely chop all the veggies. For the cabbage, I used a little handheld mandolin, but you can just chop the cabbage finely if you don’t have one. Next, make the dressing by whisking together all of the ingredients. Taste and adjust proportions to your liking. Pour the dressing on top of the salad and toss to coat well. Eat and enjoy!⁣

You can store this salad in a covered container for up to 1 week. ⁣
