MIDDLE EASTERN-STYLE BALELA SALAD! Follow @kalejunkie for more easy recipes! Cowboy Caviar is trending right now, but I’m bored (SNOOZE)—let me introduce you to Balela, a middle eastern chickpea and bean salad filled with lots of fresh herbs and a tangy dressing. It’s my absolute favorite! There are many different versions of Balela, this one just happens to be mine. ⁣

You can serve this with chips or in pita pockets, wraps, romaine lettuce leaves or just eat it straight from the bowl. ⁣
⁣
This is also a fantastic salad to meal prep because there’s no lettuce so it doesn’t get soggy, and the flavors get better and better every day!⁣
⁣
Makes 6-8 servings⁣
2 cans garbanzo beans, drained and rinsed⁣
2 cans black beans, drained and rinsed⁣
1 cup cherry tomatoes, halved⁣
1 bunch mint, finely chopped⁣
3/4 cup italian parsley, finely chopped⁣
1/4 cup dill, finely chopped⁣
1/2 red onion, finely diced⁣
⁣
Dressing⁣
1/2 cup olive oil⁣
1 lemon, juiced⁣
3 tb apple cider vinegar⁣
1/2 jalapeño, sliced and seeds removed⁣
2 cloves garlic ⁣
1 tb sumac (optional but highly recommended)⁣
1 tsp salt⁣
1 tsp ground black pepper ⁣
⁣
Clean, prep and chop all your veggies and add them to a bowl. Next, prepare the dressing. Add all of the ingredients to a blender and blend until smooth. Taste and adjust seasonings as desired. Pour over the salad and toss to coat well. Enjoy!⁣
