ICE CUBE TRAY MINI FREEZER PANCAKES 🥞 Follow @kalejunkie for more ideas like this! Ok, so here is another reason for you to buy ice cube trays. Freezer pancakes are fun and perfect for busy mornings, and also a great way to save leftover any pancake batter for future use. ⁣
⁣
As you can see, my trays are small, so I made mini pancakes, but larger trays will give you larger pancakes. ⁣
⁣
Prepare 1 cup of pancake mix according to package instructions (I used @birchbenders bc my boys love it). ⁣
Toppings of choice (fruit, nuts, chocolate chips)⁣
⁣
Prepare pancake batter and transfer it to an ice cube tray. Add toppings if desired. I used mini chocolate chips. Cover and freeze. ⁣

When you are ready to make pancakes, heat a skillet over medium heat and spray pan with oil of choice (I like avocado oil spray). Place a few frozen pancake squares in the skillet. Place a lid on top (this is important!) and cook for about 3-4 minutes on each side, or until golden brown. ⁣
⁣
They might not spread into perfectly round pancakes and that is ok! Sometimes mine stay in a square shape and sometimes they spread into circles and sometimes they even look a little wonky 🤪, so just go with it. ⁣

These will last in the freezer for up to 2 months.⁣
