THE MAYO THAT WILL CHANGE YOUR MIND ABOUT MAYO! 😏 Follow @kalejunkie for more recipes and tips. I spent my entire life hating mayo up until last year when I tried one store bought mayo that was decent (not amazing) and kind of convinced me to give it another go, but make my own. And then my world opened. Homemade mayo is another experience!⁣

Ingredients:⁣
1 egg, room temp⁣
1/4 tsp dijon mustard (I love @maille)⁣
2 tb lemon juice⁣
Pinch salt⁣
1 cup avocado oil⁣
⁣
Instructions:⁣
In the cup of your immersion blender, add all of the ingredients. Let it sit for a few minutes to settle. Then take the immersion blender and place it inside the container (firmly on the bottom — THIS IS VERY IMPORTANT). Turn the blender on and DO NOT move it for 10-15 seconds. Once you see the mayo start to emulsify (as shown in video), THEN you can move the stick up and down to combine the ingredients. Remove the stick blender, taste, and enjoy! Store in a covered container in the refrigerator for up to one week. ⁣

Notes & Tips:⁣
1. I recommend using a neutral tasting oil such as avocado oil. I have tried with olive oil on a few occasions and found that it was harder to emulsify and the taste was overpowering (but that’s just ME).⁣
2. If you are worried about consuming raw egg, use pasteurized eggs.⁣
3. The key to getting your mayo to emulsify perfectly is to place the immersion blender stick firmly at the bottom of the container and not move it at all until the mayo starts to emulsify (see instructions above).⁣
4. No, this recipe won’t work in a blender or food processor.⁣
5. If your immersion blender didn’t come with a container, then it’s important to use a jar that is just SLIGHTLY LARGER than the blender, e.g., a mason jar. ⁣
6. For an even bigger flavor explosion, add one grated garlic clove and you’ll have perfect garlic aioli!⁣
