PINEAPPLE UPSIDE DOWN PANCAKE DIPPERS! 🍍🍒🥞 Follow @kalejunkie for more easy recipes like this! 👆🏼I took my viral apple dippers and decided to use the same method, but with pineapple and cherries—for a pineapple upside down cake vibe—but then dip them into pancake batter for a fun breakfast or anytime snack! Powdered sugar on top is optional, you do you boo!⁣

NOTE: if you do not have skewers or the cherries, that is OK! Just dip the pieces of pineapple into the pancake batter and pop them in a pan! Now you have pineapple dippers!⁣

6 skewers⁣
1 cup pineapple, cubed⁣
12 maraschino cherries (or regular cherries), pitted⁣
1 cup pancake mix (I used @birchbenders)⁣
Garnish: powdered sugar (its optional!)⁣
⁣
Prepare pancake batter according to package instructions and set aside. Next, take your skewers and alternate between pineapple pieces and cherries (I did 2 pineapple pieces and 2 cherries on each). Heat a non-stick pan over medium heat. Once the pan is hot, add the pancake skewers. Let them sit for about 2 minutes, then gently flip to the other side for another minute or so, then rotate so all of the sides get gently browned. Remove from heat, add powdered sugar if desired and enjoy!⁣
