Friends, I literally could not wait to wake up this morning and share this recipe—coming in hot right in time for your weekend festivities, and it could not be easier—it’s made in a blender, which means you don’t have a million dishes to clean!⁣

And…the cake itself happens to be grain-free and refined sugar-free. I topped the cake with Simple Mills vanilla frosting and then loaded it up with fresh strawberries for the ultimate flavor explosion. You HAVE to make it!⁣

1 large ripe banana⁣
1/2 cup maple syrup⁣
1/2 cup cashew butter⁣
1/2 cup non-dairy milk⁣
2 tsp almond extract⁣
3/4 cup coconut flour⁣
1/4 cup tapioca flour⁣
1 tsp baking soda⁣
1 tsp sea salt⁣
1 tsp cinnamon⁣
3 eggs⁣
3/4 container vanilla frosting of choice (I used @simplemills)⁣
2 cups strawberries, sliced⁣
⁣
Preheat oven to 350F and line a square 8x8 baking dish with parchment paper (spraying the inside first, so that the parchment paper sticks). In a blender, add all of the wet ingredients, followed by the dry ingredients. Blend for about 1 minute, scraping down the sides as needed, until the batter is smooth. Transfer to the baking dish and even it out with a spatula. Bake 23-25 minutes, or until a toothpick comes out clean. Let cool and then add vanilla frosting and sliced strawberries. Slice into squares and enjoy! Store leftovers in a covered container in the refrigerator for up to one week.⁣
