QUICK & EASY ITALIAN TUNA SALAD (NO MAYO) ON A RICE CAKE! Follow @kalejunkie for more easy meal inspo! This is a great way to use up those rice cakes that are sitting in your pantry from that recent rice cake trend—and if rice cakes aren’t your thing, you can eat this yummy salad straight from the bowl or add it to romaine lettuce leaves and enjoy—so many possibilities to make it work for you! ⁣

PSA: this is a great recipe to use as part of your meal prep, that tuna marinates in the flavors of the other ingredients and gets better as the days go by. You can keep it in the fridge for up to 4 days.⁣

Recipe serves 2-4⁣
2 cans albacore tuna, in water⁣
1/2 red onion, diced⁣
2 tb sun-dried tomatoes packed in oil, chopped⁣
1/4 cup marinated artichokes, chopped⁣
3 tb parsley, chopped⁣
1 tb oregano, chopped⁣
1 clove garlic, mashed⁣
1 lemon, zested + juiced⁣
s&p⁣
⁣
2-4 rice cakes⁣
1 avocado⁣
1 tomato⁣
olive oil drizzle⁣
⁣
To prepare the tuna salad, add all of the above ingredients to a bowl and mash together well. Adjust salt and pepper if needed. Mash one avocado and divide evenly among the rice cakes. Add a slice of tomato to each one, followed by a generous scoop of the tuna. Add a drizzle of olive oil on top, if desired, and enjoy!⁣
