ARMENIAN CUCUMBER & TOMATO SALAD! 🥒🍅🇦🇲 👉🏼 Follow @kalejunkie for more easy and delish recipes! This one is near and dear to my heart—as you can see, it is so so simple, but I promise its bursting with flavor, you are going to love it. It is also great for meal prep because there is no lettuce, and the flavors really soak in over time.⁣

The secret is adding sumac to the dressing! If you aren’t familiar with sumac, it’s a delicious spice that comes from a plant (it’s a member of the cashew family!), found in Mediterranean/middle eastern cuisine and it has a tart, lemony flavor that is ADDICTING. It’s also very high in antioxidants. These days I see it sold at major grocery stores, but you can also buy it online, and it’s something you will use for EVERYTHING!⁣

Armenians (aka me) eat this salad with bread (hatz) and cheese on the side, or it’s often served as a side dish (think with kebabs and rice). But it’s so addictive, I just eat the whole damn bowl.⁣

What you need:⁣
2 cucumbers, peeled and diced⁣
1 cup cherry tomatoes, halved⁣
1 bunch mint⁣
1 bunch green onions, chopped (whites and greens)⁣
1 cup Italian parsleys, chopped⁣
1/3 cup olive oil⁣
1 juicy lemon⁣
1 tsp salt⁣
2 tablespoons sumac⁣
⁣
Chop veggies and add all ingredients to a bowl. Toss to coat well. ENJOY!⁣
