THE ULTIMATE GREEN PASTA SALAD WITH LEMON-TAHINI DRESSING! Follow 👉🏼 @kalejunkie for more recipes! This is the 4th salad in my Life Changing Salad Series for good reason, it will change your life! There is something so comforting about a good pasta salad—but this one here is special. It’s BURSTING with flavor and has lots of spring vibes thanks to all of the fresh herbs, and lots of crunch from the cucumbers, perfectly salted elbow pasta, and it’s all tossed in my “famous” lemon-tahini dressing that hundreds of you have made before with my ultimate KALE salad. ⁣

Pro tip: this is a great salad to make for meal prep to enjoy all week long. Store in the fridge for up to one week.⁣

Makes 4-6 servings⁣
Salad:⁣
1 14 oz package elbow pasta (or other shape)⁣
1 bunch fresh mint, chopped⁣
1 cup cilantro, chopped⁣
1 cup italian parsley, chopped⁣
3 persian cucumbers, chopped⁣
1 avocado, chopped⁣
⁣
Dressing:⁣
1/3 cup olive oil⁣
2 tb red wine vinegar⁣
2 tb honey or maple syrup⁣
2 tb tahini⁣
1 lemon, juiced⁣
1 clove garlic, mashed⁣
Salt & pepper⁣
⁣
Prepare pasta according to package instructions—make sure to salt the water well!!! Once cooked, drain, rinse, and set aside in a large bowl. Prepare the salad dressing by whisking together all of the ingredients listed above. Next, assemble the salad. Add the mint, cilantro, parsley, cucumbers, and avocado to the bowl with the cooked pasta. Pour dressing on top and toss to coat well. Enjoy! ⁣
