The @kalejunkie version of the HILLSTONE MACHO SALAD has arrived for Ep. 3 of my salad series, and I’m not gonna lie, I might have cried when I nailed this one 🤪! The Macho salad and I have a long history that I’ll save for another post, but for now, you need to know that this is one of the best salads you will ever, EVER eat, and now you don’t have to spend $25 or drive to Hillstone (or any of their affiliated restaurants) get one salad, you get to make it yourself and make four giant servings. ⁣
⁣
Makes 4 servings⁣
SALAD:⁣
2 cups cornbread croutons (or sub any croutons)⁣
4 cups red leaf lettuce, chopped⁣
3 cups green cabbage, chopped (this is 1/2 cabbage)⁣
1/2 cherry tomatoes, chopped
3/4 cup canned corn, drained and rinsed⁣
6 dates, pitted and roughly chopped⁣
1 avocado, chopped⁣
1/2 cup raw almonds, chopped⁣
1 cup (or more) rotisserie chicken, shredded⁣
1/2 cup goat cheese, crumbled (this is a required ingredient in the OG salad, but I don’t like goat cheese, so I left it off 😉).⁣

DRESSING:⁣
1/2 cup olive oil⁣
1 tb champagne vinegar⁣
1 tb maple syrup⁣
1 tb dijon mustard⁣
1 lemon, juiced⁣
1 clove garlic, mashed⁣
1 tsp oregano⁣
1/2 tsp ground black pepper⁣
1/2 tsp salt⁣
⁣
Preheat oven to 350F. Slice cornbread into large cubes, being gentle with it bc it is crumbly. Add a little olive oil and salt, bake 12-15 minutes. Remove from oven. Next, prepare the dressing. Whisk together all of the ingredients and set aside. Finally, bold your salad. Add all of the salad ingredients to a bowl, top with cornbread croutons, pour dressing on top, toss and enjoy!⁣
