CHICKEN TACO SALAD WITH TANGY AVOCADO LIME DRESSING from @kalejunkie! Welcome to Episode 2 of my Life-Changing Salad series, where I am sharing 5 new recipes for salads that will change the way you think about salads forever. ⁣

This isn’t your average taco salad. This one has a MAGICAL tangy avocado lime dressing that is a true flavor explosion—so good, I’m convinced you’ll want to bathe in it. ⁣

Makes 4 servings⁣
Salad⁣
1 lb ground chicken (or turkey or plant-based crumbles)⁣
2 tb taco seasoning (I use @sietefoods)⁣
2 heads romaine lettuce, finely chopped⁣
1 cup corn, drained and rinsed⁣
1 cup black beans, drained and rinsed⁣
1 cup baby tomatoes, halved⁣
1/3 cup cotija cheese, crumbled (optional)⁣
⁣
Avocado Lime Dressing⁣
2 ripe avocados⁣
2 limes, juiced⁣
1/3 cup olive oil⁣
2 cloves garlic⁣
1 4oz container Greek yogurt (or df yogurt)⁣
1 cup cilantro⁣
1 tsp cumin⁣
1 tsp salt⁣
Pinch black pepper⁣
1/4 cup water⁣
⁣
Sauté your chicken/protein of choice in a little oil over medium heat. Add taco seasoning, stir, and cook until cooked through, and set aside. Next, prepare the dressing. Add all of the ingredients to a food processor or blender on high speed. You might need to scrape down the sides and add a touch more water depending on desired thickness. Taste and set aside. Assemble all of the salad ingredients in a large bowl. Pour dressing on top and mix to coat well. Add extra cheese on top and enjoy!⁣
