Today we are starting with my Moroccan-Inspired Chickpea Carrot Salad, and it’s loaded with all the goodies and toasted in a lemon-tahini-cumin dressing that’s going to rock your world. So let’s make it!⁣

Note: feel free to swap out any of these ingredients! If you don’t like raisins, don’t use them! Don’t want to add any nuts? Don’t! Or add some seeds instead. ⁣
⁣
Note 2: If you want to meal prep this recipe for the week, prepare the recipe as instructed, but leave out the arugula. Just add the arugula when ready to eat the salad each day!⁣
⁣
Makes 4 servings⁣
3-4 cups arugula (or your favorite greens)⁣
1 cup shredded carrots⁣
3 celery stalks, finely diced⁣
1/2 red onion, finely diced⁣
1/2 cup fresh mint, finely chopped (this is 1 bunch)⁣
1/3 cup raisins or currants⁣
1/3 cup chopped walnuts⁣
1 can chickpeas, drained and rinsed⁣
⁣
Dressing⁣
1/3 cup olive oil⁣
2 tb red wine vinegar⁣
2 tb maple syrup⁣
1/4 cup lemon juice (1 juicy lemon)⁣
3 tb tahini⁣
1 clove garlic, mashed⁣
1 tsp cumin⁣
1/2 tsp salt⁣
1/2 tsp ground black pepper⁣
⁣
Add all of your salad ingredients to a large mixing bowl. In another small bowl, whisk together all of the dressing ingredients. Taste and adjust seasonings as needed. Pour over salad and toss to coat well. Eat and enjoy!⁣
