MY FAVORITE WHITE BEAN DIP! 👉🏼 Follow @kalejunkie for more! If you love dips, this one is for you. The secret is to sauté some onion first, and add that to the rest of the ingredients, then blend—flavor profile? 10/10. You can snack on this with veggies, chips, etc., or add it to your weekly meal prep containers, to enjoy all week long. ⁣

Note: if you want yours to be totally smooth, just pulse for another 1-2 minutes. I like mine with more texture :)⁣

Ingredients⁣
2 15 ounce cans cannellini beans, drained and rinsed well⁣
1/2 onion, roughly chopped⁣
1/2 tsp cumin⁣
Salt & pepper⁣
1/2 cup olive oil⁣
1 lemon, juiced⁣
2 garlic cloves⁣
⁣
Heat a pan over medium heat and add 1 tsp oil of choice. Once hot, add the onions, cumin, salt and pepper. Sauté for about 4-5 minutes, until the onions soften. Remove pan from heat. In a food processor or high-speed blender, add the rinsed beans, olive oil, lemon juice, garlic cloves, and the onion mixture. Process/blend for about 4 minutes, until desired texture/consistency is reached. Remove cover and taste, and adjust seasonings as needed.⁣

Enjoy with fresh veggies, crackers, pita chips, over salad, etc!⁣
